  Collapsing Categories plugin is useless I couldn't find a suitable plugin to achieve this therefore I did some javascript programming and I figured out a way to expand categories on click if there's a child category

  For now you can use "http://wordpress.org/extend/plugins/collapsing-categories/". You need to do some configuration in its widget
  1. Taxonomy type: Product Categories
  2. Post Type: Products

  It will surely solve your purpose :) , surely it will be nice if WooCommerce will provide this function in next update. Thanks.
